In contrast to other culinary recognitions from UNESCO, Italy’s nomination honors an entire culinary tradition that is both daily and widespread, rather than tied to a specific ritual or dish. Italian cuisine embodies the “cuisine of affections”: it conveys memory, care, relationships, and identity, narrating tales of families and communities through food. Following a favorable technical evaluation, the application will be reviewed by the Intergovernmental Committee for the Safeguarding of the Intangible Cultural Heritage of UNESCO. The final decision is anticipated during the Committee’s session in New Delhi from December 8 to 13. International experts will assess the cultural significance of the Italian tradition, the sustainability of its practices, and the ability to pass down knowledge to future generations.
